Nigiri sushi is a piece of fish made of small vinegared rice and gripped with both hands to make it familiar. I often put Wasabi in between the body of rice and fish. Eaten with soy sauce using bare hands and chopsticks. It was invented in Edo during the Edo period.
Since the Meiji 30's (1897) there has been evolution of fishing techniques and distribution, the environment treating fresh fish has improved. In Nigiri sushi, materials used to be attached to vinegar, soaked in soy sauce, and passed through fire were also used as raw. Nigiri which increased in kind also became smaller gradually and it changed to the modern Nigiri sushi.
When the long seclusion country was unraveled and it became Meiji, many people crossed to Latin America and North America as immigrants, and the Nikkei community was born in various places. It was 1887 when the first Japanese restaurant "Yamatoya" opened in San Francisco in the United States. In Los Angeles the Japanese restaurant "Miharashitei" opened in 1893 in the area called Little Tokyo, "Sobaya" in 1903, "Tenpuraya" in 1905, and "Sushiya" in 1906 will open. Prior to the war Little Tokyo 's Japanese restaurant increased to a community of tens of thousands of people and was a canteen for Japanese Americans.
